Die Frchte knnen nur durch einen Schttelvorgang per Hand geerntet werden, bei dem die Zibarten in ein Tuch fallen. Danach trennt Brennmeisterin und Edelbrandsommelire Heike Arzet aus Maulburg das Laub von den Frchten und maischt das seltene Steinobst so, dass ein Aufbrechen der Fruchtkerne weitestgehend vermieden wird.
